How many cans did you add? There may be an overcharge though that will typically drive high side way up.
At 250, the fan will come on and drop the pressure back down which would explain what you were seeing.
At failing compressor would have a high low side pressure as well as a low high side pressure.
One way to check this would be to start over by discharging the system and adding 2.5 cans (12oz) and see where that gets you.
