Auto or 5-Spd?
How's the weather? Raining or wet, could be connections (check and blowdry the connections at the fire wall behind the engine.)
Sounds like pedal potentiometer to me, but that was my problem so I'm biased. I always wondered (but after my pedal pot was replaced so I couldn't test the theory) if I could have started the engine, then by hand (under the hood) pulled the accelerator cable to rev the engine. My thinking was, if I accelerated mechanically (without the pedal pot) and it didn't go into LHM that would suggest the pedal pot was at fault. What's everyone else think about that?
Adjust the accelerator cable (used by Limp Home Mode) so that you don't stall out.
Sounds like you need to have the codes pulled, then reset and calibrate (as anders suggested.)
