The A/C pulls a significant amount of power from the engine. At idle, the engine produces very little power, so the additional load of the A/C can be noticeable.
What I'm sniffing around at is if the A/C compressor is starting to pull abnormally high power. This could be a sign of low freon pressure, or a compressor that's starting to fail. Not easy to figure out yourself. If it were pulling a lot of power, it would put a greater strain on the engine, which would cause more heat. Heck, it could even be causing belt slippage, and the water pump is driven by the same belt.
If the A/c compressor were pulling a lot of power, you'd notice it a lot at idle. The only problem with using this as a definitive diagnosis is that the engine is supposed to adjust the idle to compensate for the A/C load. So if the engine is barely staying lit at idle with the A/C on, is it because the compressor is pulling too much power, or is it simply a problem with the idle control (AIC valve)? AIC valve problems are pretty common. Heck, vacuum leaks cause lousy idle, and a vacuum leak with a normal A/C compressor will make for a lousy idle.
I'd inspect the belt for signs of slipping - shinyness, etc. I'd also think about getting the A/C system checked by a pro. Somebody that will do more than just measure the temp of the vent air - someone that'll check the system pressures. I'm sorry that I can't provide a simple set of go-no go tests on this, but it could be a lot of different things.
