How much oil remains in sump whilst changing oil?

Hey all, (Mr. Davies, I expect you will be the first to answer!)
Car: 97 CSE 9000
symptom: after oil change, oil appears slightly beyond max on stick

So, I tackled the oil change for the first time, this weekend. Went as well as could be expected considering my floor jack sprung a leak at some point and would only jack about one foot up. Good enough to get the car basically level and high enough to get under and get the job done. Oil gushed out. Blacker than I am used to, but it was Dino oil, and I'm used to every 3000 on the dot on my other car track/neon-acr, in that car, I now use upwards of 7 quarts. And looking at the specs for the CSE I just poured all 5 quarts of Mobil One in. Yikes! It looks over full!?!?
Is it common for that much oil to remain in the sump/pan/engine when changing? Car was slightly less than normal temp when I changed oil.
I'm loathe to run the thing with excess oil, as I have bad experiences doing such in other beasts.
Any and all comments/heckles/advice appreciated.
