First off...make sure that you're okay with getting NADA value. The insurance company will probably offer you average NADA to total out the car, minus your collision deductable. If you feel that your car is worth more, start building a case for it; look up some classifieds in the area that show a similar car for sale.
As for buying it back...ask them what the buyback is on it. I can't think they'd charge you more than a grand to buy back the car, in which case its a no-brainer. The interior, engine, wheels, stereo, electronics, etc. are worth well over $1000, and like you said, you could frankenstein it back together with junkyard parts for a sweet backup car.
