The ball joint parts are not precision instruments and have some variability, particularly if the new parts are from a different manufacturer than what was on your car when you started this. Also, there is some slop in mounting the ball joints to the control arm, the three lower screw holes are slightly larger than the bolts on both pieces. Realize that a 0.5mm change from side to side on mounting the ball joint can translate to a 2mm change in toe PER SIDE.
You may have gotten lucky when doing the struts, or one side may have cancelled the other side out. To minimize the need for professional realignment, I try to do steering components one side at a time, see how the steering wheel sits afterwards, adjust accordingly - not sure if this is a perfect method, but it has served me well for several cars.
