T-stat installed, temp wanders

I should know better. True. But I replaced a thermostat on my 94 Aero and failed to pay attention leaving the little air-bleeder-one-way-valve-thingy at the high point. I just stuck the thermostat in and put it together.
Now, the temp gauge wanders. It goes high-ish, above 9 o'clock, to maybe 945 or so. then drops suddenly to under 9 o'clock. The drop occurs in seconds. This tells me that the bleed hole in the t-stat is not even close to the top.
Have others noticed this? If you can confirm this situation, I'd like to know. I suppose when it warms up a bit I'll do the job again and turn the darn thing right side up.
And, by the way, yes the temp sensing end is inside the cylinder head.
