Here's some clarification...

They revved the car after the new thermostat was installed

Definitely the official Saab thermostat - they are a main dealer

Yes they have - Head gasket is intact apparently. The service manager said they could see evidence of coolant in cylinder 4. I bought this car after it had had a bottom end rebuild following a previous head gasket failure which the last owner couldn't afford to get fixed. Could the previous failure account for what they found in cylinder 4? I've only done 7,000 miles in the car.
