If the engine is on the hairy edge of knock, it'll perform great until something pushes it over the edge. Once the knock is detected, the boost will dial back.

Aom's points are good - check for vacuum leaks, and a cool dry day will get you more boost. But what octane fuel are you using? How do the spark plugs look? Are they the proper NGKs, gapped to just under 1 mm?

If the engine is near knock, just a slight variation in air temperature, fuel volatility, engine temperature, load, etc., can be the difference between knock and no knock. If you're not running a high octane fuel, try a tank of the next grade up. If that makes a difference, then you know it's a knock issue.
