If you open just one caliper line and plug it (a golf tee works well- just sand off the paint), not much air will get into the line. Air only gets in when fluid comes out. The most of the air will be in the new caliper.
As noted, you only need to bleed that one line that you opened (see note below). You're just displacing the air, so it isn't how long you need to bleed, but how much fluid you need to add to displace the air. For a caliper and maybe an inch of line or so, 3-4 ounces of fluid will do it. Buy a 8 ounce bottle of brake fluid (assuming you don't carry one in your emergency kit), and you'll be fine. It shouldn't take more than two or three minutes at most to clear out the air.
Of course, this is assuming you regularly bleed your brake fluid - every two years (yes, three is OK) is best. Not bleeding the brakes leads to, well, things like stuck calipers. I find that two liters of brake fluid is enough to flush the full system. I'm not sure how much the clutch takes, but I'd buy a couple more half-liter bottles. You don't want to have a big bottle - once opened, a bottle absorbs moisture. It's a little more wasteful of packaging, but I prefer to keep a few small, unopened ones around (and one in the emergency kit...)
As to the clutch - remove the inspection cover at the top of the transmission bellhousing. You'll see the bleed pipe and nipple.
