Why would you do just the rears? Unless you changed a rear caliper and the system was bled fairly recently, why would you do just the rears? Oh, and as long as you are at it, you can also bleed the clutch slave cylinder with minimal extra effort (be sure to keep the reservoir topped up for this one!).
I find that a quart of DOT4 brake fluid is enough for the entire system, but buy some extra in case you have issues while performing the work - not convenient to run out in the middle of a job. Left in an unopened sealed container, brake fluid will last for years.
