gauge readings you're seeing probably reflect a thermostat that is no longer capable of reacting in a linear fashion to coolant temperature changes. If the car is running somewhat cool initially, the thermostat was able to open initially as the car warmed up (and stayed stuck open - hence the below-average running temperature); once the thermostat was able to mechanically overcome its own stiction after being subjected to higher temperatures for a longer period of time, it closed back down to a point where it has cut down the coolant flow way below where it should be. Thermostat probably needs to go. BTW, if you live in a climate where freezing isn't a concern, you can run a 25/75 mixture of coolant to water - this helps with heat dissipation, and still keeps you protected.
