Get the car hot and turn the engine off. Listen for a sizzling sound from where the water escapes. Other choices are pressure testing with a devise specifically meant for that purpose or putting a tracer in the water that will glow under UV light. It seems that, after a while, you should see the residue build up.
One possible thing to look for is that the gasket on the thermostat may have gotten got cocked when you put the cover on. I did that once, and it resulted in a really slow leak.
