Japanese cars especially tend to have very sensitive brakes. Whenever I have one as a rental I always brake far too hard the first few times as I get used to the brakes. My theory is that it's to give drivers a warm and fuzzy feeling that they have strong brakes, kind of like how how a lot of cars have a very sensitive throttle these days that seems to give the impression of the car having tons of power.
If you're used to these kind of brakes, the 9k will feel a little weird, and maybe even alarming, when you first apply pressure to the brakes. Honestly though, once you get used to it you'll like it - it's a bit easier to control and modulate your braking. That said, I of course have no idea if the brakes on your 9k are working as designed. Bleeding is a good preventative maintenance habit anyway, but if your mechanic is familiar with Saabs and says they feel right, then they likely are right.
