I find that without the check valves, I get a delay of 2 to 3 seconds before fluid starts squirting out the jets on the hood; with the check valves it's almost instantaneous, which is useful when trying to see in adverse winter conditions, i.e. salt spray has built up into opaque salt on your windshield. I have also noticed fluid dribbling out of the headlight washers since I disconnected the check valves; may or may not be coincidental.
As BobS says: I've only seen the headlight washer - wipers do good when they prevent slush from building up over the headlights" - agree, but that's useful on salty roads when the salt starts blocking the headlight output.
