First, congrats on having an '89 with working AC!
The cooling fan shouldn't run for more than a few minutes after you shut the car off. If it's running longer, your problem is likely the fan timer relay. Replace that and you should be all set.
This assumes it's the 'big' fan that keeps running and not the small AC fan in front on the radiator. Even a cheap multimeter is hugely useful in checking your running voltage and for battery drain, but I'm guess the relay is your issue on this one.
