The hydraulic fluid is a dampener. It needs to be contained, and it probably needs to be under a certain amount of pressure. This is what absorbs some of the vibrations. Replacing the leaked fluid with grease is not going to do anything to dampen vibrations.
The tensioner is similar to the suspension system of the car. The only difference is the spring and shock/damper is combined into a single unit. Imagine taking the shocks out of the suspension, and just painting the springs with grease - that is effectively what you're suggesting for the tensioner.
