I think you get to be the one to try this. I think either option would work. I don't know if you would keep any features by keeping the rest of the anti theft computer connected or not.
Me personally I would try disconnecting it completely and then create some jumper wires to connect those 6 wires (the 3 pairs). That way I would find out if the car starts before I start cutting and damaging the harness. Also you could find out what functions are lost.
If nothing is really lost then that is how I would keep it. If I lost some functions that I wanted back I would try option 2. In general I try not to damage harnesses and probably create work for myself creating connectors. But I have lots of spare parts and lots of old harnesses to harvest pieces from. Ofcourse I understand you are probably the last care taker of this car at this point so a damaged harness you are aware of is not an issue to someone in the future. Good Luck, Bernie
