1978 99T Performance Issues

I can finally say after a considerable length of time my 78T is now a daily driver with 130K original miles. I just logged 300 miles in a few weeks. (Actually, my wife is now happy to be a passenger in the car so its certainly a success in my eyes!) Thanks to all for many helpful suggestions.
I replaced the following during the restoration project: plugs, wires, cap, battery, battery cables, air cleaner, ignition coil, air aux. valve, cold start valve, thermostat, alternator & starter, O2 sensor. Checked for air leaks found some and repaired. The car starts, idles fine, and does not overheat even after a long drive. Yes, fixed the cooling fan & relay issues. Bad connection in the fuse box as many had suggested.
Now the reason for the post: I am not happy with the acceleration. It seems that it should have more power. Yes, the car was sitting for a year but I already put fresh gas twice now since I logged in 300 miles. I am also concern that I do not have a CO tester. I adjusted the CO mixture without one and I wonder if I am taking a performance hit because its not accurately done. Is there somewhere I could purchase one? Any thoughts on the performance issues? Some suggested that the performance hit could be from a clogged cat converter. Not sure. Thanks in Advance!
