Don't over look another possibility.. if your car isn't actually heating up (and I didn't see where you said it was) I'd suspect the reservoir cap. If it is bad, the coolant will build pressure and then just start boiling out. If the coolant isn't under pressure, it turns to steam real fast. Don't know why the cap wasn't changed if they changed the thermostat. It isn't always common to do so, but if they really have no idea, I'd be a bit leery. The stripped gears on the water pump are always suspect, but you can check to see if there is coolant flow before diving into that hornets nest.
