Rear Wheel Bearing Fault Diagnosis

I have a 1980 99 GLi. The rear wheels on both sides are noisy. Upon further inspection both rear wheels have considerable play in them. I've cleaned out the hubs and bearings and it seems next to impossible to visually determine if they are bad, but I don't know what to look for. Neither the race nor the bearings are cracked, discolored, or pitted as far as I can tell. The grease seems old. It's consistency varied from clay like to jelly like. It's color varied from brownish yellow to black. Is there anything else to look for? The spindle isn't pitted or discolored either. Is repacking, adjusting them, and taking it for a road test the only way to tell for sure if they are shot?
I'm concerned only because I don't want to replace perfectly good parts with perfectly new parts. It's getting hard enough to find parts so I'd like to save the new ones. Thanks for your help. Mike
