...on what carb you get, how you jet it, etc. One big thing is whether you go with a 'progressive' carb (primary barrel opens first, then secondary barrel opens at larger throttle openings) or a 'synchronous' carb (both barrels open together.)
The synchronous carb is supposed to be better for racing, where you're at full throttle most of the time, but the progressive carb will give smoother and more linear throttle response in street driving; also better fuel economy, since you'll only be using the smaller primary barrel at part throttle.
I've only got experience with the progressive type, but I've found that there's no effect on idling and it's just as smooth as a single-barrel carb. The reason is that it IS a single-barrel carb when you're idling or driving at around-town speeds. The second barrel only opens up when you press the throttle about 2/3 of the way down -- which is just where you need it for passing on a 2-lane road, for example.
You do know that you need a new manifold to take advantage of the 2bbl carb, right? I've seen cone-shaped adapters that go on your stock manifold and let you mount a 2bbl on it, but you don't get the benefit out of the larger carb because the engine is still trying to breathe through the same size hole in the manifold...
