I don't know the steel thickness, and doubt that it is a readily available or published number, but somebody may know. Consider that it may not be the same in all parts of the body. However if it is that important, I think you might best learn by hacking out or drilling out with a hole saw a small piece in an area that will be replaced anyway, sanding off paint/undercoat/corrosion/dirt, then measuring with a dial caliper or micrometer. I think you will come out around .016".
