Things to try (in desperation)...
1) pull your thermostat and test it - boil it in a pot of water and see if it opens (even new ones can be duds).
2) check the routing of your coolant lines (sounds stupid, but make sure that your external lines are all connecting in the rignt place so that coolant can freely flow)
3) check direction of your new elec. fan. (Stupid again, but make sure its pulling air the right way)
4) check belt tension to water pump (slipping at speed?)
5) Although there is some debate over this - I've no problems with running a "modified" thermostat (clip the guts out and run with only the ring as a restrictor. Or drill 3 small holes in the therm plate to allow limited flow with the therm closed - Saab Sport & Rally recommendation)
6) Make sure the metal external coolant lines are free of blockage
7) bleed the system again (when the car's hot enough for the thermostat to be open...)
8) if all else fails - just drive faster...
