... I've had a few with this car.
Usual strategy if you don't see it, put a large piece of carboard (old moving box squashed flat) under the car overnight and look for leak locations in the morning. If it only leaks when driving, do the same thing with engine running for an hour, leak should show up by then. It is easy to leave a leak at a hose the first one or two times you are replacing one. Check the upper radiator hose along with the lower, and the heater hoses at the firewall (best done with a pair of ramps, or when car is on the lift). Finally, you can pay a service station to pressurize the cooling system, a leak will usually show up then. This only requires having an adapter to fit the thread at the overflow reservoir and a little hand pump (or buy the kit to do it at Sears).
As far as AC goes, I've spent a few hundred $$ on AC "issues". Expensive to troubleshoot. There are instructions on this board on how to recharge the system. AC lines sometimes leak at the joints when the o-ring seals get old and hard. If the low speed setting on the electric radiator fan fails to work, the AC can overheat in start-stop traffic and the refrigerant escapes out the pressure relief valve.
Can't say much about the surging/stalling, my car is a turbo (different set of issues).
