I would assume that the dealership removed the dash for the owner. Lots of people (myself included) don't really like the look of wood trim.
I'm sad to hear of the demise of the rear heated seats. Although I'm sure that very few 9-3 owners took advantage of this feature, it is unique- not too many other cars have it yet.
It's nice to see that there are far fewer switch blanks now. Especially in SEs with heated seats. It makes the entire interior look more upmarket to not have to stare at big grey buttons that make you think, "I could have gotten that feature." Next time around, maybe Saab will fill all the switches immediately with extra cool features, rather than filling them late in the production cycle.
I saw a 2001 9-3SE convert last weekend, too. Noticed the Goodyears. Eagle GS-As, I think (?). I wonder what kind of impact those make on the ride and handling of the 9-3. The Michelins grip like crazy, but they are a very stiff tire.
