Like all urban environs there are three kinds of auto theft- teen/joyriders, trawlers and theft-to-order.
The trawlers are opportunists. They can be well equiped and have some experience. But they are also usually after very popular cars (as in above posts). Try "building" a car by ordering parts at a dealer and it will cost you 10 x as much as buying it new.
The theft-to-order are also generally filling parts orders, but they are filling a specific order. Sometimes they will also go after whole cars, but usually exotics/ high value cars. They are usually very good at what they do. These are the people most likely to use tow-trucks to pull it away to garage and then work on it in relative privacy. My impression (I used to work as a paramedic) from police is that these are pretty unusual groups and there are very few at any one time.
The joyriders also include criminals who need a car to "do a job" and will abandon it later.
This having been said, NY is not anything like it used to be and Saabs are pretty hard for joyriders to steal, and a 9-3 would be unusual for parts mongers. I would worry more about PARKING in the city - especially if you are in Manhattan. The only other thing would be to consider a low comprehensive as you are probably more likely to get dings than elsewhere.
