You'll wear it out prematurely.
And begin using your handbrake on hills. Alternate between the foot and the handbrake as your personal preference/comfort level/road conditions dictate. Also, frequent use of the handbrake will keep the cables alive and rust-free.
While factory settings are there for a very good reason, your clutch can be adjusted to suit your preferences. Speak with a mechanic about your range of choices and cost-benefit. Clutch wear and adjustment is very subjective.
It's been a long time (too long) since I've owned a car (any car) where I could use a clutch. I envy you. Your car will be orders of magnitude more fun to drive and IMO, more under your control, especially if you have the very good fortune of driving on snow and ice.
