I don't know if this helps as I have an automatic 9-3, but based on my previous 15 years driving a Ford truck with a manual transmission, what you described doesn't sound unusual. I know you said your other cars didn't have this same problem, and while I'm not familiar with the 9-3 manual, I think it's simply a gearing/ratio issue. My truck had a really high 1st gear and I always needed to give it a lot of gas (i.e., high RPMs) in order to not shudder and/or stall when starting off, and possibly the 1st gear on the 9-3 is somewhat similar. I know there's no way I could have ever taken off in 1st gear at idle RPM...it would shudder and likely stall out. I've definitely driven other manual transmissions over the years that did not have this issue (usually smaller cars like you described), and could smoothly start out without needing to up the RPMs so much.
