When in Winter mode, the transmission starts off in third gear. By doing this the amount of torque applied to the wheels is reduced. The effects of the torque and revs generated by the engine are reduced by the transmission's torque convertor. As Rich mentions it allows you to pull away in heavy snow. I've even driven up inclines effectively.

The new 9-3SS has the same feature but applied differently. There is no winter mode button. Simply place the transmission in the manual shift mode. You can shift the transmission up into 3rd gear while sitting still. Then drive away.
