I would think letting her use it once a week would be best to keep the parts moving. Depends on how you feel about it.
That said I never let my wife drive my Viggen mainly because I never wanted to blame her for damage. She knows how to drive a stick well, but it comes down to things like bent rims, curb rash and dings. She isn't as careful as I am and likes to park where ever she can squeeze in. I also worried she would try talking on her phone and give it a little too much gas in first or second and run it off the road (worried about her in that case, not the car). The Viggen demands a little bit of attention. Those were my concerns, especially given the my Viggen was pristine.
It all worked out. She thought it was a little tough to drive anyway. She would rather driver her gas guzzler.
So...if I were in your shoes I would let my wife drive it, but in my case under strict conditions that she parks it in the middle of the lot away from others and uses my pothole avoidence tactics...and of course no cell phone or eating while driving. She would make me proud and the car would get some use.
The the good thing about storage is you could much lower your insurance costs.
