The additional octane in premium fuels discourages pre-detonation (pinging)--which can destroy your engine very quickly.
THis isn't the whole story and I'm not an expert, but generally: Turbos add heat to the inlet air through both compression and the simple fact that the compressor is close to the exhaust-driven turbine, when at higher charge pressures the atomized fuel added to that hot air and combined with the charge pressure makes the whole system very volatile and more likely to pre-detonate. Pre-detonate is when the contained explosion happens too soon, so your piston isn't in the correct position when the mixture ignites. That's bad. Other things can happen too, but that's one of the biggest concerns.
Increasing the octane in a fuel directly decreases the volitality of that fuel. So because the fuel is more stable under higher heat and pressure conditions the charge pressure (boost) can be ran higher and the timing advanced, etc... Which all means more power with better fuel and less chance to ruin your engine.
If you run cheap gas in your car you are relying upon the engine management to constanatly recognize that it can't run as much power as it's designed to do because if it did it would melt your pistons. If the management were to fail or analyzie incorectly, you'd have problems very quickly running cheap fuel. That's why higher grade gas is recommended, same with high compression NA cars too....
