With the iPod, I am using the Belkin adapter. Plugs into the "dock connector" of the iPod on the bottom, and connects to cigarette plug. This allows charging, and the beauty of the Belkin adapter is that it also has a line-level, amp output, which is also powered. Very highly rated at iLounge.com, even over the monster counterparts.
Thanks to my GF and family, I am using my aux adapter (not thanks to them for the aux, but thanks for the iPod and accessories) with my 60GB iPod and Belkin adapter.
Your headphone not working may be a result of you not having the volume turned up on the iPod itself. Because you are using the headphone out, that means it is passing through the iPods settings for equalizer and volume, in addition to being passed through your radio. This is why a pure aux-in and line-out are desired, as distortion can occur the other way. I know if I use the headphone out on the iPod, I need to jack up the volume to about 2/3s to 3/4s to get an acceptable sound.
