ECUs, and various other computer devices have capacitors or something like that to hold enough current to keep their memory alive when you change out the battery or for some other reason the current is off for limited periods of time. When you hold the battery cables together, these devices get discharged so the ECU memory, the clock and everything else that depends on these devices loose their memory. Actually your probably don't need to hold them together for the entire period but you should touch them together for a while to discharge everything. But then it is just as easy to tie them together with a twist tie or a piece of wire and go have a beer so why not.
