Help pls re putting on my new wheels and tires

Today, to my great delight, new wheels and tires for my 00 9-3 arrrived: 16" Vikings refurbished by Wheel Collision (very pretty) with 205/50 Kumho ECSTA SPTs mounted. While I've casually thrown wheels on before, I want to do these right, so...
1) Tomorrow I'm going to Sears to buy a torque wrench. Looks like I'll have to get 1/2" drive to make 80 ft/lb. I knows there's religion about beam vs click, but any reason not to go for the click one that's on sale for $48 ($27 off)?
2) Am I right in thinking that I want a 17mm socket for the lug nuts?
3) I read that one should put "anti-seize" on the wheel hubs. I suppose that's like greasing the splines of my wire rims. But is this some special product?
4) And just so I don't get surprized, what's the deal with the center caps? Will they simply still be on the hub after I pull the wheels?
5) Is the best approach a floor jack at the jack point under front door hinge to mount tires first on one side and then the other? (Someday I may ask the question of how one jacks up the rear end.)
