If you had done it yourself, one way to tell it by heating the t-stat in a pot of water. Perhaps, (just speculating) its a new t-stat from a different manufacturer that takes longer to open due to slightly different material used. My original was made in england and the replacement one was made in germany. same t-stat. But since you paid for hte work, go ahead and ask. if you touch coolant hose that goes to the driver side top of the radiator, it should be warm and and you know it working. the temperature sending sensor is very easy to change if i recall, but i had the t-stat out. if you change it now, you will have some leakage
