(I presume the car has an auto trans. Sometimes manual transmissions use ATF for lube, though. I will continue based on an Automatic Trans...)
If Dexron IV is what is called for in the manual, then that is what is needed. And if the bottle of the fluid you put in says it is not recommended for transmissions that require Dexron IV...
As for what is different, that's really not an issue. Your transmission will live longer and shift better with the correct fluid.
The wrong fluid can potentially be a source of many problems, including bad shifting, not holding gears, possibly leading to the need to rebuild or replace the tran$mi$$ion.
As an example, the 5-speed auto in my 2002 9-5 requires a special fluid recommended by AW (which is neither Dexron III or IV) because it needs to be able to slip more than other types of fluid would allow or could put up with. Putting the wrong fluid in there would be a bad thing.
