If your engine is overheating I don't think the thermostat is the likely cause? When Tstats fail they tend to stick open. This results in the engine being slow to warm up from cold.
However, if the Tstat hasn't been changed in a while, then it is a sensible task to carry out.
I just did this recently on my 9-3 (2.0L turbo) and it was very easy and only took around 20 mins to do.
If you have the 2.0L turbo engine then simply follow the 1.5in thick radiator hose from the top right hand side of the radiator (as you look at the engine) and you will see that it goes backwards and joins the engine. At the point where it joins the engine is the thermostat housing.
Undo the rad hose where it joins the radiator and drain out the antifreeze. Then undo the 3 bolts that hold on the thermostat housing (little fiddly to get to). Once the bolts are undone simply pull the metal thermostat housing off (if it is gummed on, give it a light tap with a rubber mallet, or a block of wood). You will then see the thermostat inside.
Pull the old thermostat and rubber seal out and replace with new. Once everything is bolted back on top up the antifreeze (using fresh coolant) by adding it to the plastic tank.
Run the engine until warm with heater on. Let cool and double check coolant level and look for leaks.
