I believe Sachs is the OEM and they will last around 80k-100k. Cheaper than Bilstein. Bilstein OTOH will outlast the car. No more strut replacement. And more expensive. HD and Sport are same shock except Sport is recommended for lowered car.
Your rattle sounds like when my strut mounts were shot. You can check if they are bad, but in general you should replace strut mounts and bearings when you replace struts since taking strut apart when mounts goes bad you have to take apart struts again.
I don't understand how struts would affect traction. Depending on hardness of the struts you can improve ride quality or handling. You want to find the perfect balance for your driving. If shock from road imperfections bother you go for softer one; if handling is more important than ride quality get harder one. Also Koni's can be adjusted.
Alignment is recommended after taking strut apart. and do both sides at the same time. different struts left and right would be dangerous.
