Coolant Temperature sensor and thermostat?

2002 93SE with ~145K miles. Michigan driving.

Last year, I ran into an intermitten problem with my temperature gauge dropping to zero and triggering a CEL (check engine light). I brought a new one (It was under $20), and installed it this summer. The problem never came back, but then again, the CEL did not come frequently. A few weeks ago, I saw it again. In fact, I saw it while I was driving. The coolant gauge arrow twitched a little bit and the CEL came on, and almost immediately, it dropped to 0. If I turn off the car and back on again, the arrow goes back to where it should be. (So I'm sure its not a thermostat problem). This is a new sensor....I noticed the wires connecting to it is thin and when cold, quite brittle, but the issue isn't constant, so I'm hesitant to replace anything at this point...

Any ideas?

Also, when should I typically change the thermostat? I have 145K miles already....
