Hi Eiron,
Going through almost the exact same thing with my 99 Viggen as well. Reasonably light damage to the front of the car, but offset on the passenger side so no airbags or radiator. Ins co wanted to total my car, I fought the value up a bit and spoke with the person who appraised my car to be sure they knew all the resources they could contact to find replacement parts. They finally agreed to repair it. If they had not, I would've asked the CT Insurance Commissioner's office to review the case (this is a right we all have - use it, that's what the office is there for). If they still wanted to total it, I would've built up the value as much as possible, then bought the car back. It's you're right in ANY state to buy your car back, remember that. There's also always legal action. If you love the car, trust me, you'll find a way to make it work! Good Luck!
