Hey, I wouldn't do the oil pan gasket unless you know for 100% sure it's leaking - with the V6 oil comes from everywhere so fix other leaks first.
The oil pan gasket was the only DIY I couldn't finish myself - had to tow it to the local shop. You need a hoist for the engine and you need to drop the sub-frame, and the sub-frame bolts are in the 200 lb/ft. torque range IIRC. I thought I could do it without the hoist (my problem). Even then, I had all the bolts loose on the oil pan and it wouldn't move - turned out that even though the gasket (it's cork BTW) was soaked with oil, it was holding strong and the old was superficial and from somewhere else.
If you can DIY the valve cover gaskets, it's better to just take your time and do it right - my last VC job is holding going on about 4-5 years now. The rear one is tough to access - think about changing the plugs while you're back there.
