Smell/Coolant Loss After New Engine

We had a replacement engine put in our 2000 9-3 in January (due to sludge) and have put about 7,000 miles on it since then.
There are 2 problems that I've taken it back to the shop for a number of times that they haven't been able to fix:
First, there's a persistent burnt kind of smell you can smell after you park... especially after driving hard. That says PCV to me, doesn't it? The car had the latest PCV fix applied before the engine replacement, but probably none of the additional hoses not included in the upgrade kit.
Second, we've gotten low coolant warnings twice now. Took it in the first time and they pressure-tested the system and reported it was fine. Coolant's low now too... a couple of months later.
I'm trying to figure out my approach here... I'd like to keep taking it back to the same indy that replaced the engine, but I don't have a lot of confidence that they know what they're doing.
I'm toying with the idea of replacing the PCV components myself because it's relatively cheap and might solve both problems?
Anything else I should be considering? (I seem to remember hearing about a PCV passage inside the valve cover that can get clogged up if there's sludge in the engine... although I can't find anything about that now.) Could this stuff be happening if they didn't clean that passage out before putting the old valve cover on the new engine?
Or I may take it to a different indy (Saab specialists) for them to look at.
Any thoughts anyone?
