Sounds to me like there's air in the hydraulic system.
Got plenty of brake fluid? The clutch get's a little section of the reservoir that's walled-off from the rest, so it might LOOK like there's plenty of fluid. Look over on the side where the hose goes to the clutch MC.
Then bleed the clutch. Filling the reservoir isn't gonna remove air bubbles that are already in the lines.
Finally, it might be a bad MC. Similar to brakes that slowly sink to the floor, the clutch will slowly engage if you hold the pedal down for a long time.
