Most of the problems with the manual a/c is with the directional knob. The drum inside the heater box would bind and cause the knob to break. I replaced the heater box myself back in 2002 and it was a full weekend job. After finishing I decided it was worth the $1200 to have the mechanic replace the heater box the next time it happened. Fortunately it hasn't been a problem since. The temperature knob is connected to a stiff wire that actuates a damper. Its very likely that wire/cable got disconnected somewhere.

If you remove the glove compartment and passengers kick panel you will see a black ~1/4 inch diameter plastic cable with a metal wire inside that stretches from near the a/c control unit to the floor by the passengers feet. If you turn the temperature knob the internal wire should move to actuate the damper and the black sheath should be stationary. If the wire is connected in the passenger foot well it could be disconnected at the control unit or the sheath has become disconnected from the back of the control unit (most likely). Reaching in from the passengers kick panel you can push the a/c unit forward to remove it from the dash. As you push the control unit froward make sure you disconnect the directional control "toilet paper" shaft. I find it easier to align it with the control unit rather than the heater box once you put the control panel back. The end of the wire hooks onto the tip of the temperature control lever on the left. The black sheath snaps into the back of the control unit on the right. This is what likely broke or became disconnected because it will allow the actuator to open up to heat, but when you turn it back to cold it just moves the cable around.

Years ago I found the black sheath just popped out when I had the same problem you described. Last year it happened again and it turned out to be the plastic slot on the back of the control panel snapped. A bought a used control panel from eBay to fix it.
