First the crazy idea: If just the engine then the rest of the car sounds like it is ok. Especially as its a convertible, have you thought of an electric car conversion? I have a buddy who did one on a Spitfire. Its a neat, and quick car... just small as hell.. plus as it has almost no insulation and no engine you hear so much you won't have otherwise... like I couldn't believe how loud the transmission is. His range is about 35 miles with a round trip commute of about 26 and he is able to charge at work. If he knows the weather won't be good (really bad rain, really hot or cold) he takes his regular car. I think he is about $12K into it, put out about $20K but got something like $8K back in Federal & State rebates. He did some of the work himself. Half or more of his costs were just the car itself... I don't think he realized how much that would cost at the end of the day with the new paint job and having to track down and pay "premium" prices for a lot of the parts of the car to finish it off such as trim, reupholstering the interior. He was able to sell a lot of the parts he didn't need as you could that is fuel, engine, cooling system related. But as you already have a car you are half way there.
Not so crazy: I'd say take more than you think you need or want. Worse case is you sell or give them away... but if you don't take it know you'll never have it.
First, I'd go for just about every thing that is relatively small with value that could be taken off the engine... depending on how ambitious you are. AIC, MAP/MAF (can't remember which on that car), CPS, BOV, BPC, EVAP Valve, PCV, ABS module, spark plugs, collection of fuses & relays & bulbs, wiper blades, antenna if working, air & cabin filters, SID, power window control pack, knobs especially on manual A/C, fan resistor pack.
A little more ambitious or larger would be A/C compressor (that year's can't be rebuilt), water pump, fuel pump, turbo, steering rack, cat, internal T-5 parts a T-7 tuner would be interested in, headlight & tail light housings, fog lamps... don't know the convertible top, but sounds like there is value in some of those parts. There is a whole hose of other steering and suspension parts depending on age.
Based on a other recent posts, perhaps things that could be repurposed, like the recent posts on the front seats to make desk chairs out of, (or the rear seat to make a couch or bench out of)? Plus don't forget to look around for anything that just says Saab or is Saabish that you may want to pull for a souvenir, like the front grill or the badges (I'd say even a worn badge is a badge of honor).
