I've done lots of searching for this problem on this board and others. A thermostat or temperature sender fixes the problem in every instance that had a solution so hopefully I'm not sending you down the wrong path. Your problem could very well be one of those items. My indie has told me that he's put thermostats in that failed right away so if you haven't changed one out recently I'd try that first. If you have a volt meter you can test the sender to make sure it's working. Just disconnect the sending unit in the engine and put the probes on. It should be around 2400 ohms at ambient and 240 ohms at operating temperature.
I suspect I have a wiring problem somewhere, but it's odd that it only happens in cold weather after the t-stat opens. The only thing I can think of is that when it's warm out the wire expands and makes contact, but when it's cold I barely have contact which puts extra resistance into the connection. With the "cooler" coolant the added resistance puts me into the "cool" zone of the temperature gauge.
If I find my solution I'll certainly post it. Good luck!
