Check your tire pressure. Do you adjust to compensate for lower seasonal temperatures?

I had a similar problem and the O2 sensor was checked and the rear of the cat inspected and appeared normal.

It was suggested that a baffle in the exhaust system could have shifted. So I had the Sports exhaust fitted, as there was aleady a leak in the resonator. But that exhaust system is not an option for your V6.

Check that you don't have any brakes dragging. The rear inboard bads can get stuck in the caliper slots as well. (not referring to the pistons)

Oil consumption going up? Possible stuck rings if you are using dyno oil. Suggest using Mobil One if not using already and use a can of oil additive that claims to free stuck rings before the switch to Mobil One if applicable. Do not add any thick STP type oil addatives!

Another possibilty. How old is your timing belt. Old enough for the belt to have slipped one tooth? Or was the belt replaced and off a bit and your gas consumption has been off since that work?

How is the starting, idle and power at full throttle?
