On the classic 900, there is a separate switch in the coolant line for AC shutoff at high temps. Not sure if such a switch exists on the NG900, but if you could locate and disconnect or jumper it (depending on how it works) you could rule out/in such a problem.
Hope someone else knows.
BTW...youre due for a new tstat anyway. every 1.5-2years. Only takes 1 overheat to warp the head and/or the plastic tanks on the ends of the radiator. Cheap insurance.
