Yes, you can remove some coolant without spilling.
Are you sure that sensor is bad. You checked it with an ohm meter to verify? Or a bad connector or wiring problem. The sensor will be around 2K ohms when cold and 200 when hot.
You can remove the coolant from the expansion tank with a syphon or syringe. Then put a 1/4" OD tube thru the tank and down its lower hose. Hard to get the first go, but can be done. You can the put the tube down that hose as far as it will go and syphon that down. You can get well below the level of the senor that way. It takes a while to syphon, but don't leave it for long as you can get more that a gallon out this way and that would overflow the 1 gallon bottle that you are using! From there the upper rad hose can be removed and a tube inserted to the bottom of the rad end tank and coolant can be syphoned down to that level. So most of the coolant can be removed without loss. Search for drs<underscore>install and read the pump, therostat and IC posts for cooling system info.
